For over 11 years Allpress has exclusively represented La Marzocco in Australia. Choosing the very best espresso machine and making it available to those passionate about serving delicious coffee supports our absolute focus on flavour. Founded in Florence, Italy in 1927 La Marzocco are world-renowned for producing innovative yet artisan espresso machinery. These machines are handcrafted in the finest Italian tradition and found in many of the world’s best espresso bars, cafes and restaurants. La Marzocco have designed the most thermally stable espresso machine on the market and temperature stability is critical in delivering consistently great tasting espresso. Dual Boiler Technology The primary function of an espresso machine is to brew coffee using pressurised water and also to produce steam for texturing and heating milk. The machine must be capable of thermal stability at the point of extraction, as fluctuations in water temperature and pressure will have a detrimental effect on espresso flavour. In 1939 La Marzocco developed and patented their unique dual boiler technology. Every machine has one boiler tank and one brew tank. The boiler is dedicated to steaming milk and the brew tank is dedicated to coffee extraction. This allows the tanks to operate simultaneously yet independently of one another. Typically Australian baristas use the milk steaming function far more than their Italian counterparts, who mainly drink straight espresso. This greater demand for steam upsets the temperature stability of a single boiler machine and can lead to bitter or scorched espresso. With La Marzocco dual boiler technology the brew tank and the saturated group-heads hold a large mass of water at the ideal temperature. This is controlled by a precise thermostat and the result is a much more stable brewing temperature and consistently better tasting espresso. The dedicated steam boiler delivers greater steaming power resulting in a superior milk texture as the steam is hotter and dryer. La Marzocco continue to advance existing technologies while maintaining a focus on the tradition of espresso and the expertise of the barista.
